The "Change Players" item lets you change the number and names of the players.
The next three items let you set the skill level of the computer opponent. Currently it uses a very simple, exhaustive search algorithm, so level 3 can take a long time to decide on a move (especially on slower Macs). On the other hand, while you're waiting you get to see the world's first brain storm cursor in action.
The "Be Quiet" item lets you turn the sound on and off.
The "Remove snd Resources" item will permanently and irrevocably silence your game (but it will ask first to make sure that you really want to do that). I think the sounds add a lot to the game. Unfortunately, they also add about 50K to the size of the application file. So, for those to whom space is more important than cool sounds, I reluctantly provide this self-destruct.
